Jeroni Castell, Xef del Restaurant Les Moles.<\/p>\n<p><strong>El aceite de oliva virgen extra<\/strong> catal\u00e1n es un producto de proximidad, de calidad y presenta una gran diversidad. Estos aceites se comercializan directamente a consumidores, pero <span style=\"color: #666699\"><strong>s\u00f3lo unos cu\u00e1ntos llegan al sector restaurador<\/strong><\/span>.<\/p>\n<p>El sector restaurador de Catalu\u00f1a es uno de los m\u00e1s potentes y desarrollados del mundo. Actualmente, m\u00e1s y m\u00e1s restaurantes est\u00e1n interesados \u200b\u200ben utilizar aceites de alta gama en la cocina, como ya est\u00e1n haciendo algunos. Pero hay muchas <strong>preguntas en cuanto al comportamiento de estos aceites.<br \/>\n<\/strong> Preguntas como: vale la pena usar un aceite premium? Se notan los aromas del aceite o se pierden durante la cocci\u00f3n? \u00bfSe transfiere el picante del aceite al alimento? Qu\u00e9 \u00bfpasa con los pigmentos? \u00bfY el punto de humo? Y<br \/>\nlos compuestos de degradaci\u00f3n por acci\u00f3n de la temperatura? \u00bfY el coste por raci\u00f3n?
